I’m doing some research about how to play 360º video on Kaltura but I couldn’t find any official information.
Is this supported (in both community / Pro versions)? If not, is this something that is part of kaltura roadmap for a near future?

It’s supported in the latest version. It’s spherical projection. Upload the content and add the “360” tag to the entry.
Don’t forget to enable 360 video in the player configuration.
